I have a strange fascination with stripes. That started when I worked as a sous chef in a small Parisian bistro. I always laid the pasta on the plate in perfectly straight lines with a ruler. My chef, Jean Jaques de Loraine, asked me to stop doing that. Really, I tried, but I couldn't do it. Something in me just couldn't accept the imperfect chaos of crumpled pasta. Eventually, it ended in a fistfight with chef de Loraine. He was a lot bigger than me, so he won. On my way out, I still called his mother a hag. HA!!! Since then I have never worked as a sous chef again.
